Delicious Oat Cookie Recipe: Indulge in Scrumptious Homemade Treats
For those who love chocolate, add a twist to this delectable oat cookie recipe by substituting three tablespoons of flour with cocoa powder. These tasty treats are delightful snack and packed with fibre, making them a perfect choice at any time of the day.
Serving Size: Makes approximately 40 small cookies
Ingredients:
- ¼ cup of peanut butter
- ¼ cup of butter
- ¾ cup of sugar
- Three eggs, beaten
- Three tablespoons of low-fat milk
- Two cups of uncooked oats
- One cup of whole-wheat flour
- Half a teaspoon of bicarbonate of soda
- Half a cup of raisins
- Half a tablespoon of ground cinnamon or mixed spice

Method:
- Preheat the oven to 180°C. Line a large baking tray with baking paper.
- In a mixing bowl, beat the peanut butter and butter until well blended. Add sugar and mix thoroughly. Gradually beat in the eggs, one at a time. Stir in the milk.
- In a separate bowl, combine oats, whole-wheat flour, bicarbonate of soda, raisins, and cinnamon (or mixed spice). Stir this mixture into the sugar mixture until well blended.
- Allow the cookie mixture to stand for a few minutes. Roll the mixture into small balls and place them on the prepared baking tray. Gently press down each ball with a fork or spoon.
- Bake the cookies for approximately 10 to 15 minutes or until they turn light golden brown. Once baked, remove them from the oven and let them cool. Store the cookies in an airtight container and enjoy them as a delightful teatime treat.
