Looking for a fun and nutritious snack that your kids will love? Look no further than Tea4Kidz Yoghurt Bark! Created by Kaylee Swart, this delightful recipe combines the wholesome goodness of yoghurt, the natural sweetness of Rooibos syrup, and the fresh flavours of blueberries and granola. Recipe compliments of Joekels.
Serving: 15 Pops
Ingredients
Rooibos Syrup:
- 2 Tea4Kidz Rooibos Teabags
- 250 ml Water, Boiling
- 1 ¼ cup Sugar, Granulated
Yoghurt Bark:
- 125 ml Yoghurt
- 15 ml Rooibos Syrup
- 20 g Blueberries
- Handful Granola
Method
To make the Rooibos Syrup:
- Place Tea4Kidz Rooibos teabags into a mug, followed by boiling water, and allow to brew for 4 minutes.
- Remove the teabags and place the brewed tea and sugar into a saucepan.
- Over a high heat, allow the liquid to boil, then reduce to a low heat and let simmer for 7-10 minutes, ensuring all the sugar has dissolved.
- Take the saucepan off the heat, and let the syrup cool fully. Store in your desired jar, and enjoy.
To make the Yoghurt Bark:
- Place the yoghurt, Rooibos syrup, blueberries, and granola into a bowl.
- Mix until all ingredients are combined.
- Place the mixture into a 15-pop silicone mould (scrape the top with the back of a knife, in order to remove any excess).
- Place in the freezer and leave for at least 2 hours.
- Remove from the freezer and pop out of the mould.
- Eat and enjoy, or place into a freezer-proof container and store in the freezer.
Note: If you do not have a mould, you can spread the mix evenly over the lid of a plastic container, and place in the freezer for 2 hours. Then remove from the freezer and take the bark off the lid, break it into desired-sized pieces, and enjoy.
