- ½ avocado
- 2 tbsp sour cream
- ½ cup shredded lettuce leaves
- ½ cup black beans or red kidney beans
- ½ cup charred sweet corn
- ½ sliced red pepper
- Salsa
- 1 cup cooked rice
- Lime and coriander
Method
