Easy homemade blueberry popsicles

Blueberry popsicles are a refreshing and delicious way to welcome the vibrant spirit of spring. And what better day to indulge than on 2 September, Blueberry Popsicle Day? This day is dedicated to celebrating the sweet, tangy goodness of blueberries in frozen form, making it the perfect excuse to enjoy this fruity delight.

Popsicles have been a beloved snack for over a century. The story goes that in 1905, 11-year-old Frank Epperson accidentally left a mixture of powdered sugar, water, and a stirring stick outside on a cold night. By morning, the concoction had frozen solid, and the first popsicle was born. He called it the Epsicle, which later became known as the popsicle, a name that’s stuck around ever since.

Blueberry popsicles, in particular, have grown in popularity thanks to their vibrant colour and the blueberry’s status as a superfood. Packed with antioxidants, vitamins, and fibre, blueberries are as nutritious as they are delicious, making them the perfect ingredient for a guilt-free frozen treat.

Making your own blueberry popsicles at home is simple and fun.

Ingredients

  • 2 cups fresh or frozen blueberries
  • 1/2 cup Greek yoghurt
  • 1/4 cup honey
  • 1/2 cup coconut water
  • 1 tablespoon lemon juice

Method

  1. In a blender, combine the blueberries, Greek yoghurt, honey, coconut water, and lemon juice. Blend until smooth. You can adjust the sweetness by adding more honey, depending on your preference.
  2. For a smoother texture, strain the mixture through a fine-mesh sieve to remove any blueberry skins.
  3. Pour the blueberry mixture into popsicle moulds, leaving a little space at the top for expansion as they freeze. Insert popsicle sticks into the moulds.
  4. Place the moulds in the freezer and freeze for at least 4 hours or until completely solid.
  5. To easily remove the popsicles from the moulds, run the outside of the moulds under warm water for a few seconds. Gently pull on the sticks to release the popsicles.
