Ingredients
- 3-4 chicken breasts (depending on size)
- Olive oil
- 500g baby potatoes
- Lettuce leaves
- Baby tomatoes for roasting
- Salad onions
- Pitted olives
- 4 flatbreads or pitas
Gyro Spice Mix
- 1 Tablespoon of dried oregano
- 1 Tablespoon of paprika
- ¾ teaspoon cumin
- ¾ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 ½ teaspoon of salt
- ¾ teaspoon pepper
Tzatziki Sauce
- 250ml Greek yoghurt
- Cucumber
- Chopped fresh mint leaves
- 1-2 cloves of garlic; crushed or grated
- Lemon
Method
- Chicken: Lightly spray chicken breasts with olive oil. Coat with gyro spice mixture and air fry at 180°C for 20 minutes.
- Potatoes: Halve the baby potatoes, drizzle with olive oil, season with gyro mix, and air fry at 200°C for 20 minutes.
- Tzatziki: Grate cucumber, sprinkle with salt, and combine with yoghurt, mint, garlic, and lemon juice.
- Assemble gyro: Start with lettuce, then add chicken, tzatziki, roasted tomatoes, olives, and salad onions.
