Meat-free Monday: Spicy potato samoosas

Are you ready to take your Meat-Free Monday to the next level? Look no further than Spicy Potato Samosas – the perfect blend of crispy, savoury goodness that will have everyone reaching for seconds.

Samosas have an adventurous history that dates back to ancient Persia, where they were known as “sambosa”. As traders and travellers moved across continents, they brought these tasty treats to the Indian subcontinent, where they evolved into the beloved samosas we know today. Now, they’ve found a place in kitchens worldwide, and it’s time to welcome them into yours!

Ingredients

  • 1 packet Samoosa pastry
  • 5 potatoes, peeled and cubed
  • 1 Tbs Vegetable Oil
  • 1 tsp mix of Cumin & Coriander seeds
  • 1 Laager Pure Rooibos Teabag (cut open bag and remove leaves)
  • 1 Onion, diced
  • 1/2 tsp Turmeric
  • 1/2 cup Water
  • Pinch of Salt
  • Handful Coriander leaves, finely chopped

Method

  1. In a saucepan, bring the potatoes to a simmer and heat for about 30 mins until soft and tender.
  2. In a pan, heat oil, spices and tea leaves for a few mins, then add onions and fry until translucent.
  3. Add the turmeric and potatoes, mix and mash with a fork.
  4. Season with salt and add water, cook for 5 mins.
  5. Remove from heat and allow to cool, then add chopped coriander.
  6. Fill each samoosa case with 2 tablespoons of filling.
  7. Deep fry or bake them at 180 degrees Celsius until golden brown (preferred).
  8. Enjoy with a cup of Laager Rooibos!
